How we produce malt

Malt is germinated cereal grains that have been dried in a process known as malting. The process for producing malt is complex and takes 7-13 days.

1. Soaking


The grains are washed and soaked to allow the grain to absorb moisture and to start to sprout.

2. Drying


The grains are dried until the required moisture content and colour are attained.

3. Processing


The malting process releases flavour and let natural enzymes develop. Malt intended for powdered products is ground to desired particle size.

4. Liquid malt


Malt intended for liquid extract is mashed, boiled and centrifugalized. After the terminating evaporation, some extracts are also roasted.

Diastatic malt


Diastatic malt is an enzymatic malt that turns starches into sugars and creating food for the yeast. It also improves loaf volume, texture and overall flavour.

Non-diastatic malt


Non-diastatic malt does not have any enzyme functionality and is used mainly for its colour and aroma. Go from a light golden crust to a dark brown.

Rye Malt Powder (Organic)

Malted roasted and crushed rye. Lends a nice and rich rye flavour also at a low dosage.

Crushed Wheat Malt

Produced from malted and crushed wheat. Provides a distinctive malty taste with a pleasant coarse earing structure. Increase the fibre content and do not need to soak. Can also be applied as decoration on top of bread. Enzymatic power 300-400 wk.

Malted Rye Flakes

Produced from malted and rolled rye. The flakes have a light colour and a mild and sweet malt flavour. Gives a coarse bread with a nice eating structure. Can also be applied as decoration on top of the bread. Enzymatic power <10 wk.
